Okay, so my family ventured to Wal-Mart for some groceries to get ready for being back to school next week and to also get ready for my week with no meat. I was a little stressed in that I was not sure what food I would choose. After we finished up shopping(which doing grocery shopping with a 3 and 5 year old is never successful), we spent over $250. Say what? Man, it is so expensive eating healthy. Aside from not eating meat, we have decided to go back to being healthy after throwing that concept out the window for about 2 months. Now, I have a massive amount of food that cost more than we thought. Food has been gathered and now I begin to prepare some dishes for the week tomorrow. Will keep you posted. We tore up some Steak N Shake as our final meal of really unhealthy food. So good and the kids eat free!
OH MY GOSH I LOVE STEAK N SHAKE!!! we don’t have one in new bern, though. we have to drive to winson salem…. sigh.
It was quite delicious last night. I tore up the double steakburger. I always have to get cheese on my fries and I have been obsessed with the Peppermint chocolate chip shake they have been making lately. Plus, the kids eat free and they actually eat there. It is as close to heaven as one can get sometimes.
I’m looking forward to hearing about your menu! Don’t knock tofu completely–if you get the super-firm tofu (Wildwood is my favorite brand), cut it up into cubes, and then pan fry it so it’s golden brown, it’ll hold up nicely when you throw it into a stir fry or fajitas (fry bell peppers and onions cut into strips, then add the pan-fried tofu with some chili powder, lime juice, salt, and pepper). But if tofu is grossing you out, just use beans in the fajitas instead. If you eat a salad for lunch, add some kidney beans, garbanzo beans, or hard-boiled eggs to it to make it more filling. Pasta is super easy to do meatless. You can do all kinds of great soups and have mashed or roasted potatoes on the side and a really good french bread. If you’re craving fast food, Taco Bell’s 7-layer burritos are vegetarian, and you can order a cheeseburger from Burger King with no meat and just put your french fries on it instead. It’s an adjustment any time you make a change in your diet, but it’s really easy after you get used to it. Good luck!
Super Awesome ideas! This is what I am talking about. This changes seem so obvious yet I was oblivious to these fantastic ideas. Replacing the meat with french fries at Burger King. Brilliant! French Fries are the best from BK. I will give tofu a try. As I tell my children I should not judge it until I try it.
